Cinnamon – both the spice and the essential oil come from the bark of the cinnamon tree. Most of the production of cinnamon is for the spice industry.
The bark can be harvested year-round after it has reached 3 years of maturity. The tree is cut, and the bark peeled from the trunk and the major branches. The tree can regrow and, when it has reached the right size, be harvested again. After the bark is harvested, it is dried in the sun. The bark is then steam distilled to produce the essential oil.
