Avocado Citrus Salad with Pomegranate and Pistachios

This salad is perfect as a light, nutritious lunch or as a colorful side dish that pairs well with grilled meats or seafood. The combination of creamy avocado, sweet citrus, and crunchy nuts, along with the tangy dressing, makes this salad a delightful mix of flavors and textures.

Salat

Ingredients:

  • 2 cups fresh baby spinach leaves
  • 1 avocado, peeled and sliced
  • 2 oranges, peeled and segmented
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup pistachios
  • salt and pepper, to taste

 

Assemble the Salad:

  • In a large salad bowl, layer the spinach leaves as the base.
  • Arrange the sliced avocado and orange segments over the spinach.
  • Sprinkle the pomegranate seeds, crumbled feta cheese, and pistachios evenly over the top.
  • Drizzle the dressing over the salad just before serving.
  • Toss gently to combine without breaking the avocado slices.
  • For a final touch, drizzle a little extra virgin olive oil if desired and season with salt and pepper to taste.

 

Salat dressing 

Ingredients

  • ½ tsp honey
  • 3 tbsp extravirgin olive oil
  • 1 tbsp apple cider vinegar
  • 5 drops Wild Orange essential oil or Clementine oil
  • lime or lemon juice, to taste

 

Instructions

  • Whisk together honey, olive oil, vinegar, Wild Orange or Clementine essential oil until well combined.
  • Add lime or lemon juice to taste.
  • Adjust seasoning as needed and drizzle over salad.
